Have you guys ever had lavender pancakes? If you’re like I was when I first heard that, you’re like, "what the what?! Did you just say lavender pancakes?” You guys, they are amazing and are one of my favorite things to indulge in! Here is a recipe for you to try.
Lavender pancake recipe with real maple syrup:
Ingredients:
2 eggs
1 ¾ cups of milk
¼ cup of oil
1 ¾ to 2 cups of all-purpose flour
3 tablespoons of honey
4 teaspoons of baking powder
¼ teaspoon of salt
3 tablespoons of ground* lavender buds
1 teaspoon of vanilla extract
Heat the griddle over medium high heat until hot (375°F). In a large bowl, beat eggs. Stir in milk and oil. Add all the remaining ingredients; stir just until large lumps disappear. If you want thicker pancakes, add more of the flour, for thinner ones add more milk.
For each pancake, pour approximately ¼ cup of the batter onto the hot griddle. Cook until bubbles begin to break on the surface, about 2 minutes. Turn them over and cook until golden brown.
Top with butter and maple syrup and enjoy!
*Culinary lavender will ensure it hasn’t been sprayed or treated with unsafe chemicals; organic is another option. I often use organic English Lavender, Munstead, because it has a sweeter taste than other varieties.
You could also use a pre-made baking mix for a gluten-free option or to save some time!
